This research suggests that drinking beet juice promotes a balance of mouth bacteria, which is associated with improved blood vessel health and brain function.
According to this analysis, foods such as beet, lettuce, spinach, and celery are rich in inorganic nitrate. These and many other mouth bacteria are involved in the transformation of nitric oxide to nitrate, which helps regulate blood vessels and neurotransmission (chemical messages in the brain).
